Over the past years, people around the world have shown a great amount of interest in Korean cuisine. Almost everyone is familiar with dishes like bibimbap and tteokbeokki now, but it’s time to learn other Korean delicacies!
- Naengmyeon
One of the dishes Koreans look for when summer season rolls around is naengmyeon, or cold buckwheat noodles. What sets this noodle dish apart from the rest is that it’s served cold with chunks of ice to beat the summer heat. There are two main types of naengmyeon: mul-naengmyeon, which is noodles served in a clear, refreshing broth typically made with beef broth or dongchimi (radish water kimchi) broth; and bibim-naengmyeon, noodles mixed in a red, spicy sauce.
- Bindaetteok
There are many different types of pancakes you can find in South Korea, and one of them is bindaetteok. Packed with ingredients like ground mung bean, kimchi and vegetables, bindaetteok is savoury and flavourful. It’s perfect to have whenever and wherever as a quick meal, as an evening snack or late night supper.
- Seolleongtang
Koreans love their soups as much as they love their pancakes, and seolleongtang is a soup that has been loved for generations. This ox bone soup is a traditional dish made from ox bones, brisket and other cuts. The milky white broth has a remarkably thick taste, and since it’s rich with calcium and protein, mothers usually prepare seolleongtang in winter to enhance health and stamina for the family.
- Yukgaejang
This spicy stew has a special place in every Korean’s heart. Made from beef brisket, fernbrake, scallions and a whole host of other ingredients, yukgaejang was once served in Korean royal court cuisine. Rich and nutritious, making yukgaejang is not quite an easy feat, so typically it’s made in large batches to share with neighbours or to be stored in the refrigerator for a period of time.
